Sardine Assam Laksa

Ingredient:

1.5L litre water

3 x 425g cans of TC Boy sardine in Tomato Sauce, mashed finely

150g chili paste (Cili boh)

2 tablespoon Tamarind paste

2 pc bunga kantan, chopped finely

10 laksa leaves (daun kesum)

Salt – to taste

5 pc assam keping

1 pack laksa noodles 

 

For Garnishing: 

1 Cucumber, julienned

1 round lettuce, chopped 

3-4 bird’s eye chilies, sliced

5 pc Kalamansi (Limau Kasturi) 

4 hard boiled eggs , 1 cut into 4

1 pc red onion, sliced thinly

 

Preparation:

1. In a large pot, combine water, bunga kantan, laksa leaves, chilli paste and boil it.

2. Add in the mashed sardines and its sauce into the pot and boil in medium heat for 30 mins. 

3. Add in asam keping, tamarind paste and salt. Taste and cook it for another 10 mins.

4. In a serving bowl, put in laksa noodles, garnish all vegetable on top. Pour the laksa soup and serve immediately.
